Yesterday, we had our first Junior Activity Club! They had enough workers for the regular Activity Club, but I still wanted to be involved with the kids, so I started a small "Junior Activity Club" for the 2 - 5 year olds. It was at the same time as the regular Activity Club, so they were pretty excited that they got to go do something, too! We had a lot of fun (although the adults in the room needed earplugs at intervals), and made Easter bunny cakes! I made the large bunny, ahead of time, and they made baby bunnies with cupcakes. For those of you who would like to try this, here are the directions:
Take a round, layer cake (any size) and flip it onto it's top. (if you use cupcakes, make sure you fill them only 1/3 full before baking, as they will be too fat and out of proportion otherwise) Ice the bottom of the cake (now turned up), then cut exactly in half. Stand both halves upright, to form a semi-circle, and press both iced sides together. Spread the entire cake with icing, then sprinkle generously with coconut. Use a ball of coconut for the tail. The kids wanted colored coconut so I tinted some different colors in Ziploc bags. Cut out ears from a pink paper plate, or any other suitable, pink material, and use mini jelly beans for eyes and nose. I had a bag of Jelly Bellies and they went wild with color combos, some creepier than others! :D
