Zucchini bites

Too much zucchini?? Never!! My brother, Jon, planted a small garden this year, and put in a few zucchini plants, which have been producing for a week or so now. We've been enjoying them fried, roasted, in casseroles, bread, pasta sauce, etc. When I was on the A~team, there was a Ukrainian girl in the kitchen, who prepared them in a way I'd never had before, but loved! I decided to try it myself!
 Lightly coat thick slices of zucchini with olive oil. Sprinkle with salt and pepper and broil on high heat, turning once. You can also pan fry if you're not doing a big batch. Try not to taste them all... ;) Chill.
Mix a generous amount of minced garlic into a little mayonnaise. The garlic should pretty much knock your socks off! Spread a thin layer of garlic mayonnaise onto the top of the zucchini slices. Top with a sliced tomato quarter and sprinkle with salt and pepper. I tried a new twist, and added parmesan cheese and basil to several, which was awesome! Chill until ready to serve, or just start popping them!

Do you not recall that summer when we ate zucchini like twice a day 6 days a week! That was too much for me... never say never. :-)

Yeah well, Maria, back then it was only served 2 ways, fresh with ranch dip and occasionally fried...mostly only raw tho...so yeah, it would be different now with all the different ways u can find now with internet etc. :-)

Yeah, I can't even stomach the thought of it raw any more, and I can't eat ranch dressing either. :P Cooked it is!! And the "never too much" statement, was "what to do with it", not "consuming too much". At least if you bake with it, you can give it away... :D

O YUM! Or you could remember your "gardenless" sister... = ) I can't eat ranch dressing anymore either, after that zucchini summer!
