Garden fresh

The Caprese salad is one of my favorites, and it doesn't get any better than with home~grown tomatoes!
 Pick some of these big guys fresh off the vine, and slice thick
Slice up some fresh Mozzarella cheese, and layer with the tomato slices on a plate
Snip some fresh basil over the top
Drizzle with aged balsamic vinegar and sprinkle with salt and pepper ~ an amazing Caprese salad!

Zucchini pizzas ~ the perfect dinner companion
Pick a couple of medium zucchinis from the garden (or roadside stand). Slice into 3 (4 if they are on the large side) slices, lengthwise. Drizzle slices with a little olive oil and rub on both sides. Place on baking sheet. Spread tops with fresh, minced garlic and sprinkle with salt and pepper. Broil on high until a deep golden color, and crispy around the edges. Remove from oven and turn broiler to low heat. Spread each slice with pesto and then your favorite pasta sauce. Sprinkle with Mozzarella (the fresh Mozzarella was amazing), Parmesan cheese, and your choice of toppings. Broil on low heat until the cheese is melted and golden.
 Low carb pizza that tastes amazing!!
Enjoy! Then make more for lunch the next day!

WHAT!?! Where was I? LoL! I actually bought that same cheese for that EXACT reason. Unfortunately Isaac can't have the cheese though and I was wondering who I was going to get to eat it with me. : ) You even crossed my mind. hehe. I just got some tomatoes yesterday from Fifers so I could make some cause the ones in our "garden" aren't ready yet. My basil died though. : ( Not enough water...

Maria ~ Yeah, Mom picked up several packs of the cheese, because I told her it was amazing. lol! Fifers tomatoes are probably pretty close to home~grown! Too bad about your basil! I'm sure mine would have died too, if it had been out in this heat!

Looks wonderful, Teresa! I will have to give it a try. Just curious, do you grow you grow your basil indoors? I really want some fresh and it just won't grow very well in these woods, but maybe inside?

I've had my pot of basil indoors for several months now. I got it from a garden center instead of the supermarket. I keep it on the window and keep it well-watered and it seems to be doing great! I hope it lasts year round!! :D I think it's too hot here to last outdoors...
