This weekend included both meanings and it was so nice!

I got this biscuit recipe from Sarah K-B last Thanksgiving and it's the best recipe I've found so far, and about the easiest thing you could ever hope to bake! They always turn out light and fluffy and no kneading or rolling is required. I made them for brunch yesterday but I left out the herbs this time as I wanted them to work with sweet as well. I usually use dried herbs because that's what I have on hand, but the original recipe calls for fresh and that's even better! Just triple the amount called for if using fresh.

Cheddar Thyme Biscuits

2 cups flour (spelt)
1 tsp salt
3 tsp baking powder
1/4 tsp thyme
1/8 tsp parsley
1/8 tsp rosemary
1/2 cup cheddar cheese, grated (or whatever kind you have on hand)
5 Tbsp butter, in pea size pieces, cold
3/4 cup milk
1 tsp lemon juice

Preheat oven to 400 F (200 c). Grease a cookie sheet and set aside. Mix flour, salt, baking powder, herbs and cheese in a large mixing bowl. Cut in the butter until crumbly. Mix the milk and lemon juice and let stand for 5 minutes. Add to the flour mixture and stir just until the dough holds together. Add a little bit more milk if needed. Drop by large spoonfuls onto the cookie sheet, 1 1/2 inches apart. Bake for 10 - 12 minutes, or until light golden. Makes 9 large or 12 medium biscuits.

Lol! Yes, that IS in fact blackberries, in the mixed berry compote. I have had the herb biscuits with jam, but you're right, it is a little funny! :D
