Happy Friday
And Happy (belated) Birthday to my niece, Megan, and my AMAZING Dad. He's like the energizer bunny - he just keeps going, and going, and going... It's tough to keep him down, my dad! He's a fighter, on many different fronts, and is a constant source of inspiration and encouragement to me! Love you, Dad!!
Abbie helped me make Dad's birthday dinner - eat-in Olive Garden style. Abs, you're awesome and the best little sister anyone could wish for!!
Shrimp and asparagus risotto
The recipe we found here, but tweaked it a little. We added a little extra parmesan cheese and only 1 1/2 cups of rice since 2 seemed like way too much. It turned out well and is an excellent risotto!
My cooking interview was interesting, but went well. When I got there, I was told that some tilapia was thawing for me to prepare, and that I could also make some chicken tenders, and was shown where the potatoes, rice, pasta, veggies, etc. were. I was to make two separate entrees, two plates of each. Gulp, and quickly formulate two menus. I ended up making pan fried tilapia with lemon, sugar snap peas, roasted potatoes with onion and sour cream herb sauce, and parmesan crusted chicken tenders, mushroom alfredo sauce over penne pasta with roasted tomatoes and basil. I accidentally grabbed a carton of liquid egg product instead of cream for the alfredo sauce, and realized it AS I was pouring it into the sauteed garlic. We both laughed and I started over. He said the fish was awesome and that he LOVED the pasta, but that he still had a couple more people to get in and would get back to me by next week. Fingers.still.crossed.
